8 lbs. Light Malt Extract2 oz. Amarillo hops
8 oz. crushed Biscuit malt (grain)1 oz. Simcoe Hops
8 oz. crushed Crystal (10L) malt (grain)1 oz. Warrior Hops

1 packet of Fermentis Safale S-05 dry ale yeast

•Steep the crushed grains in 1 gallon of water (150˚F) for 20-25 minutes.

•To your brew pot add the following:
The liquid from the steeped grains.
Approximately 1.0 gallons of water
8 lb. Light malt extract syrup

•Bring all of the above to a boil and then add the following hops at these time intervals:

Watch out. Once it begins to boil, it froths quite a bit and a boil over on the stove is likely if you don’t pay attention!

0.25 oz. Warrior Hop pellets10 minutes
0.25 oz. Warrior Hop pellets20 minutes
0.25 oz. Simcoe Hop Pellets30 minutes
0.25 oz. Amarillo Hop pellets40 minutes
0.25 oz. Amarillo Hop pellets50 minutes
0.25 oz. Amarillo Hop pellets60 minutes (end of boil)
0.25 oz. Simcoe Hop pellets60 minutes (end of boil)

•Remove the pot from the stove and add 2 gallons of cold water to an already sterilized
primary fermenter that holds 6.5 to 7 gallons.
•Pour in the hot wort from your brew pot and add enough additional cold water bring the total volume up to 5 gallons.
•When the wort temperature is under 80˚ F pitch your yeast.
•Ferment in the primary for 1 week to 10 days or until the fermentation is complete..
•Transfer to a carboy and Dry Hop with

0.25 oz. Warrior, 0.50 oz. Simcoe, 1.25 oz. Amarillo for 1 week.

•Bottle with ¾ cup priming sugar (corn sugar)
